Amsterdam, a city known for its rich culinary tapestry, offers an array of breakfast and brunch options to satisfy every palate. During a recent visit, we had the pleasure of experiencing De Uitsmijter, a breakfast and brunch restaurant renowned for its open-faced breakfast sandwich breads. Located at the RAI on Europaplein, De Uitsmijter boasts a delightful menu, and it’s easy to see why it’s a popular choice among locals and tourists alike.
Exploring the Origins of Uitsmijter
Before delving into our delightful breakfast experience, it’s worth noting the origins of the Uitsmijter. While it’s a breakfast staple in the Netherlands and Belgium, its roots trace back to Germany. The German dish “Strammer Max” typically consists of a slice of bread, sometimes fried in butter, topped with ham, sometimes cheese but always a fried egg. Variations abound, originating from the Berlin and Saxony regions. Bavarian versions often feature heartier components like Leberkäse paired with a fried egg and potato salad.
In the Dutch rendition of Uitsmijter, you’ll typically find a minimum of two eggs, white bread, and Dutch cheese, most commonly Gouda. Of course, there are numerous variations available, including options with fish.
A Scrumptious Uitsmijter Experience at De Uitsmijter RAI
My partner and I decided to indulge in caffeinated hot beverages for our breakfast brunch adventure in Amsterdam. To accompany our drinks, we both opted for the “Classic” Uitsmijter. The base of this dish always consists of “two eggs on toast”, with diners having the choice of two toppings from a selection that includes cheese, bacon, avocado cream, roast beef, or ham. In our case, we both selected avocado cream and bacon.
Our choice turned out to be a fantastic decision. The bread was perfectly sliced, providing just the right thickness to support the hearty toppings. The eggs were fried to perfection, aligning perfectly with our individual preferences. The bacon, crispy and flavorful, added a delightful crunch and smoky dimension to the dish. While the avocado cream was creamy and delicious, I couldn’t help but wonder how slices of fresh avocado would have elevated the dish even further. Nevertheless, the Uitsmijter at De Uitsmijter is my latest breakfast obsession, an ideal open-faced sandwich for a leisurely weekend breakfast or brunch.
This breakfast delight isn’t just for locals; it’s also an excellent choice for tourists staying near Europaplein and RAI. It provides a hearty and satisfying start to another day of sightseeing in the vibrant city of Amsterdam.

To round out our meal, my partner and I decided to share a simple croissant, a classic choice that pairs beautifully with a cup of black coffee and a cappuccino.
