Amsterdam, a city known for its vibrant food scene, is home to an array of culinary delights. If you’re seeking a unique plant-based experience that goes beyond the typical meat substitutes, look no further than KOOL Pop-up Restaurant. Nestled on Wibautstraat, this temporary dining establishment offers an array of innovative and flavorful dishes, with a particular standout – the Cauliflower Wings.
Unveiling the KOOL Experience
KOOL Pop-up Restaurant is a testament to culinary innovation, embracing vegetables as the star of the show rather than trying to mimic meat classics. As the brainchild of two friendly and passionate owners, the Restaurant is currently in its concept phase, allowing them to experiment with different dishes and flavours. It’s a place where you can witness the evolution of a restaurant, making it a compelling reason to visit Wibautstraat 95 in Amsterdam multiple times.
The restaurant’s philosophy is clear from their website: “Simple, tasty, and sustainable food” with a focus on “lots of veggies.” Their aesthetic mirrors their culinary ethos, aiming for a minimalist Scandi-style design that showcases the purity of ingredients while delivering bold flavours.

A Taste Sensation – Cauliflower Wings and More
During my recent visit to KOOL Pop-Up Restaurant Amsterdam, I was immediately struck by its tasteful design. The outdoor seating area exuded summer vibes, while the interior was sleek and stylish. A charming touch was the presence of fresh flowers adorning the tables, a rarity in many restaurants today, adding a touch of elegance to the dining experience.
For lunch, my partner and I eagerly tried their offerings. I ordered the BRIOCHE with fried Cauliflower ‘Kibbeling,’ complete with pickled onions and remoulade Sauce for 11€, while my partner opted for the BURGER with a Black Bean Patty, Cheddar, Pickles, Baked Onions, and BBQ Sauce for 13€. As sides, we chose the Fries for 4€, which came automatically with Mayo, and the renowned Cauliflower Wings for 9€, surprisingly not served with an additional dip. However, as I discovered, they didn’t need one.


Both the Veggie Burgers were nothing short of spectacular, boasting exceptional taste and a delightful crispiness. The flavours were well-rounded, and the patties had a perfect thickness. The star of the show, though, was the Cauliflower Wings, made in-house by KOOL themselves. These were a revelation, offering an explosion of flavours. They were crispy yet bathed in a saucy coating and expertly seasoned, making them a true delight for the taste buds.
As we savoured each bite, we couldn’t help but appreciate the thought and creativity that went into crafting these plant-based dishes. The balance of flavours and textures showcased the expertise of the KOOL team in creating satisfying and memorable meals without the need for meat.
