Recipe: simple savoury Tarte Tatin with zucchini and cream cheese

It does not get any faster: a savoury Tarte Tatin with zucchini and cream cheese in less than half an hour, including all the preparation. Sometimes it just has to be a simple dish that can be prepared in no time, and of course, that also tastes fabulous. In preparation for my upcoming trip to the south of France, I wanted to prepare something flavorful tasting like France. A hearty Tarte Tatin is the ideal solution for a quick dinner, with a simple salad as a side dish. As a vegetarian, I opted for a meat-free savoury variation of the classic sweet tarte tatin with apple slices. There are hardly any ingredients needed and absolutely no skill in cooking neither. And so, let’s go, with the first recipe for a hearty Tarte Tatin (more to come!) …

Ingredients for a small puff pastry Tarte Tatin

  • 17 cm puff pastry (~ half package)
  • 3/4 of a small zucchini
  • 1/4 of a small onion
  • 2 tablespoons cream cheese, natural
  • 1 tablespoon olive oil
  • Spices (pepper, herbs, salt, …)

Preparation for a savoury Tarte Tatin with zucchini and cream cheese

First off, you need to pre-heat your oven to 180-degree Celsius top-/bottom-heat. In the meantime, take your baking dish and place it on the rolled-out puff pastry dough. Cut the dough accordingly to the size of the form.
Now, drizzle about one tablespoon olive oil in your baking dish. Make sure the bottom is evenly covered in oil. I have used the small aluminium form named “VARDAGEN” by IKEA (available as a double pack for 4,99€), which I can highly recommend for smaller cakes/tarts.

Cut your Zucchini and Onion by hand, or use a slicer for even thickness. First, place the Zucchini in the bottom. Overlapping or in some symmetrical shape, this definitely depends on you. Place the thinly cut onions on top and season with pepper, herbs, salt and any more spices you like (chilli, …). Spread the 2 tablespoons of the cream cheese evenly over the previously cut-out puff pastry. Important is that the edges should stay uncovered, as they may need to be slightly folded later to fit in the form.

And now it’s already assembly time for this indeed super simple savoury Tarte Tatin with zucchini and cream cheese. Flip the puff pastry and cover the baking thin. The side with cream cheese has to touch the onions, the bare side needs to be facing towards you. As the tarte is flipped later, what you see now is the bottom of your future tarte tatin. Touch the dough with a fork (small vents for the hot air to leave). Just a few minutes later, your homemade savoury Tarte Tatin is ready for the oven.

Let it bake for about 20 Minutes until the dough maximised and is slightly browned (you don’t want it to be too brown). Take it out of the oven, let it cool for a minute or two, carefully lose the edges cautiously and flip the Tarte onto the serving plate. Serve with a small side salad with a light vinegar/oil/herb dressing and enjoy slightly warm.
