Express Focaccia Recipe by Sarahs Day

On TikTok, YouTuber and businesswoman Sarah Tilse aka Sarahs Day shared her highly anticipated recipe for “Express Focaccia”. She prepared it multiple times already, often sharing the process on her regular YouTube Vlogs and Social Media. Her Express Focaccia Bread is so pleasing, that she even claims she prepares it up to twice a week. This must mean something… As she only shared a quick TikTok video about the preparation, I’ve written down her ingredients and instructions below. For me, and you! As the dough needs to rise multiple times, the total preparation time is about 2 hours.

What is Focaccia?

Focaccia, a traditional Italian bread, is a beloved culinary delight renowned for its simplicity and versatility. Characterized by its dimpled surface, golden crust, and soft interior, this oven-baked flatbread is often flavoured with olive oil, salt, and herbs like rosemary. Originating from Genoa in north-western Italy, it has evolved into various regional interpretations across the country. Focaccia can be enjoyed as a standalone snack, sandwich bread, or accompaniment to soups and salads, embodying the essence of Mediterranean cuisine with each delicious bite. Focaccia is not comparable to Pizza but is a great appetizer or standalone meal if filled with nice meats, cheeses and Pestos.

Recipe: Express Focaccia by Sarahs Day


1 1/3 cups of lukewarm water (316 ml)
1 Tablespoon of Honey
1 sachet of instant dry yeast (7g)
1 Tablespoon of Olive Oil (you might want to use infused oil like garlic oil)
2 cups flour (baking flour or 00 / zero zero)
pinch of salt
toppings of choice: garlic, rosemary, sea salt flakes, cherry tomatoes, bell pepper, zucchini, onion, …

Instructions for the Express Focaccia Bread by YouTuber Sarahs Day

First, add 316 ml of warm water into a bowl, followed by a tablespoon of honey. Mix both until the honey is more or less incorporated, before adding a sachet of dry yeast to the mix. Set the mixture aside somewhere warm, until the top of the yeasty liquid frothes up.

After this, add a tablespoon of olive oil. Now use a bigger bowl and add the yeast-liquid as well as two cups of flour and a pinch of salt. Mix the dough using a wooden spatula until the flour is fully incorporated. At this point, you might want to add some more lukewarm water, as the consistency should be quite runny. Almost comparable to raw egg white. Once you have achieved this consistency, let some more olive oil run around the edges of the bowl, so the dough doesn’t stick that much, and cover the bowl with cling wrap.
Set the dough aside to rise at a warm place for at least 30 minutes, better 45 minutes.

After the dough has grown in size, cover your hands in olive oil, and scrape the outside of the dough to fold the dough over. Cover the bowl again with the same cling wrap and set it aside for another 30 to 45 minutes.

Repeat the stretch and folding after the second phase of rising the dough. Set the dough aside for a little more and prepare your topping(s) of choice. Sea Salt flakes might be mandatory, you can also add minced garlic, onion or vegetables of choice.

Now add baking paper as well as olive oil to your baking pan and gently transfer the dough to the tray. Add the toppings, and some more olive oil on top and bake the express focaccia by Sarahs Day at 210 degrees Celsius with fan for 15 minutes or until golden.
