You definitely want to enjoy those homemade marinated garlic olives! Imagine a still warm summer evening, with the sun shining in its most deep yellow tones. You can still feel the heat of the day, but already the cold moist of the soon approaching night slowly dances through the wind. It’s one of those summer nights which are utterly perfect. What better snack to enjoy, before dinner? Right, some luscious marinated olives with a kick. Here comes the perfect easy recipe. Simple, fast and most of the work does the refrigerator. Three, two, one.. go!

Ingredients for marinated garlic olives

  • 170 g Olives of your choice (you can use the cheap ones in a jar) (170 g drained weight of one glass)
  • 4 tbsp Olive Oil (about 50 ml)
  • 2 garlic cloves
  • 1 tsp salt
  • 1/2 tsp chili flakes
  • 1/2 (freshly) ground pepper
  • for extra-freshness: 1 squeeze of fresh lemon juice

Instructions for homemade marinated garlic olives

The instructions are simple and within no time you can enjoy your very own homemade marinated garlic olives. It’s best to prepare this in an airtight container (you should prefer glass over any kind of plastic), for the marinating-time in the fridge and for presentation later on.

First, drain the glass of olives in a colander and give them a quick wash with plain water, while still in the colander. Let them sit in the kitchen sink to dry off.

In the meantime, peal the garlic clove and cut it in small pieces. You can also squeeze them through a Garlic press but I personally prefer to have pieces instead of a garlic mush for my marinated garlic olives.

Now take your glass container, and first add the drained olives. You don’t need to pat them dry, its still great if they are slightly covered in water from the wash before. Now add the garlic on top of the olives and now the olive oil. I prefer them to be just about coated in oil, you can of course add as much olive oil as you want. It’s healthy anyway, right?

Now add salt, chili flakes (if you wish) as well as (fresh) ground pepper. Close the lid of the container and give everything a good shake. You want everything to mix fully. I love it when garlic pieces enter the inside of olives, so nice!

Once you have finished this, place them in your refrigerator for at least 30 minutes before serving. Enjoy them solo as an appetizer before a meal, or as a topping for salads or sandwiches or so much more. Above all, enjoy your quick homemade marinated garlic olives!
