Check out this recipe for my version of yellow tomato bread salad. Have you ever heard about Panzanella? It’s an authentic italian recipe for what I’d call “bread salad“. An ideal no-heat dinner or lunch. Ideal for summer, especially if you have fresh, ripe ingredients. My version for this Tomato Bread Salad is without onions, so don’t worry if you can’t or don’t eat them. I substituted them with bits of garlic and some capers for this extra salty-tangy taste. This yellow Tomato Bread Salad is generally a mix of different tastes and crispness, and can be fully adjusted to your own likings. A bit more heat with a little (more) chili flakes, a bit added water for a less sour taste, or other unexpected flavors added by fresh or dried herbs. Customize this bread salad to your own preference, and enjoy a happy summer evening enjoying this dish.

Ingredients for yellow Tomato Bread Salad

  • 1 big yellow tomato
  • 2 slices of pre-toasted bread that already became hard and crunchy
  • 40 g olives (regular pitted or garlic marinated olives)
  • 1 tbsp oil (olive oil, flavoured garic oil, chili oil,…)
  • 2 tbsp good balsamic vinegar (Aceto di Balsamico di Modena)
  • 1 tsp capers
  • salt and pepper for seasoning

Instructions for a bowl of flavourful yellow Tomato Bread Salad

The assemly of this tomato bread salad is very easy. First, slice and chop up your tomato. I usually half it, slice it and cut rectangular cubes. Always depending on the size and juiciness of the tomato. First i add the tomatoes to a salad bowl or eating bowl, and season the tomatos with salt and pepper, and drizzle the first tablespoon balsamic vinegar as well as haf the tablespoon olive oil over them. Let them sit while you prepare the other parts of this yellow tomato bread salad.

Now take the olives, half them or use them in full size, add them to the tomatos, add the capers and the remaining vinegar and oil of your choice. In this state, you can easily refrigerate the salad if you prepare it hours before eating.
Right before eating this tomato bread salad, cut your crunchy bread in bite-sized pieces and add it to the salad. Mix everything well and serve immediately.
You dont want to soak the bread too much, just a bit. If the tomatos arent very rich in liquid and more fleshy, you might want to add a pinch of water for an extra juiciness. But usualy the tomatoes lose quite some liquid, this step wont be always necessary.
